Italian Sausage Pizza

A gluten-free, lactose-free, refined sugar-free, and moderately-high-histamine pizza (but can be modified) recipe that Tastes Like Normal! Crispy oven-roasted crust baked on a pizza stone with my fresh new pizza sauce, topped with homemade Italian sausage, Jarlsberg cheese, and pepperoncini peppers.

Pizza Dough:
2 1/2 cups flour mix
1 cup tapioca flour
1/4 tsp salt
1/2 cup salted butter, softened
1/2 cup coconut milk*
1/4 cup water
3 eggs
Note: One crust recipe makes two 15-inch round pizzas. Yes, sometimes I half the recipe and split my egg in half.
*Coconut milk commonly contains additives such as gums and acids, intolerable by many with histamine issues. I cook with Aroy-D 100% coconut milk, linked above.
Fresh New Pizza Sauce:
15 oz diced canned tomatoes, drained
6 oz tomato paste
1/2 onion, chopped
3 T basil, dried
2 T oregano, dried
2 T minced garlic
2 T maple syrup
2 T olive oil
1 T ancho peppers, chopped
2 tsp salt
Note: One pizza sauce and sausage recipe covers one 15-inch round pizza.
Italian Sausage:
1 lb ground pork, unseasoned
2 T Italian seasoning
1 T Worcestershire sauce (optional—this is high-histamine)
1 tsp salt
Optional toppings: Jarlsberg cheese and pepperoncini peppers.
Instructions:
Preheat the oven to 475°F.
Stir together the dry dough ingredients in a large bowl.
In a separate bowl, whisk together the wet dough ingredients.
Stir to combine wet to dry and knead until the dough shapes into a large ball.
Thoroughly sprinkle flour on the pizza stone.
Place the ball of dough on the stone and use your hands to roll out the dough and press the toward the edge to make the crust.
Bake the crust for 18 minutes before adding toppings.
While the crust is in the oven, combine the pizza sauce ingredients in a medium saucepan and heat on the stovetop on medium-high for about 6 minutes.
In another pan, cook and season the ground pork on the stovetop.
When the crust is done, remove the pizza stone from the oven and top the crust with pizza sauce, Italian sausage, and optional toppings.
Bake for another 3-5 minutes.
